I absolutely love a good roast chicken and while they really are best cooked in the oven nestled into a bed of onions and carrots and all that good stuff, who has the time during the week?
I'll tell you, no one. Not even people who have time have the time to do a proper roast chicken when juggling the work week. So I've partnered with Legion of Spice to bring you the easiest, most delicious, set it and forget it, slow cooker Jerk Chicken recipe.
I kid you not when I say this is easy and preparation barely takes any time at all. It's so easy, I put together a little video to show you just how quickly you can get this baby cooking.
Okay I'll slow it down for you :-p
Here is what you will need to make my Legion of Spice "I'm a Jerk" Crockpot Chicken:
1 Whole Chicken (I have a personal policy of only buying hormone free, antibiotic free, Humane Certified birds, these are becoming easier and easier to find, but your local health food store or a Whole Foods will have them)
1 Heaping Tablespoon of Legion of Spice I'm a Jerk
Salt and Pepper
Onions or Potatoes for your "Roasting Rack"
So here we go, friends!
Remove your chicken from it's packaging and blot it dry with paper towels. DO NOT rinse your chicken. It's totally unnecessary and it just sprays bacterial all over your kitchen. So skip that step.
Dust your lil chicken with some salt and pepper (make sure to get inside the cavity)
Quarter your onion and stuff your chicken with them. This adds extra flavor and moisture to your chicken while it roasts.
Please excuse the indelicacy of this photo, but you really want to make sure you pack your chicken with onions.
Next, get your Legion of Spice I'm a Jerk seasoning ready. Legion of Spice was kind enough to send me some samples so I could try out their totally Gluten Free, Soy Free, Non GMO, All Natural, Made in the US of A seasonings and rubs.
Seasonings and spices can be a massive problem for those of us Gluten Free Folk ,as it's often not easy to determine what's really in them. Quite honestly, that should be a problem for everyone, but I get how overwhelming ingredient lists can be.
That's why I love Legion of Spice. They are upfront about what's in their product in a way larger companies aren't, so you never have to worry about a gluten (or other allergen) attack.
Okay now, here comes the really tough part. Ready?
Take your seasoning and rub it ALL over you your chicken. Just ALL over it.
Make sure to get some under the skin and sprinkle some in the cavity as well!
Whew! That was taxing.
After your chicken is properly rubbed down with your I'm a Jerk seasoning, pour a thin layer of olive oil in the bottom of your crockpot, just enough to cover the bottom.
Then thickly cut some onions and/or potatoes and place them in the bottom of your crockpot as your "roasting rack".
The roasting rack keeps the chicken from being in direct contact with the bottom of the crockpot. This way it won't burn or get soggy.
A word of warning, you don't really get to eat the roasting rack (it gets super saturated and mixed in with bones and whatnot), so I try to use food that's a bit past its prime but still usable, just so I don't feel guilty about wasting a really spectacular onion or something. Alternately you could use some balled up tin foil.
Then, just put your chicken in the pot on top of the potatoes and onions, pop on the lid, and flip the switch to low.
This next step is my favorite part. Just leave it alone, cooking in that crockpot, for 6-8 hours on low heat.
You can just go about your day, live your life, and when you get home your house will be filled with the gorgeous smell of Jerk Chicken. Legion of Spice has taken all of the guess work out of seasoning a Jerk Chicken, so all you have to do is rub it down, cook on low, and enjoy!
After 6-8 hours, turn off the crockpot, grab some tongs and start pulling that chicken! After hours on low heat, the meat will be so moist it will fall right off the bone!
Pile it high on a plate as the main dish, make some Jerk Chicken tacos, a pulled chicken sandwich, or toss it into a salad. Whatever suits your fancy!
I tossed mine into a spinach salad with wild rice and mango!
The mango and Jerk Chicken was a winning combination. Sweet, savory, and a little bit of spice. It's everything you could want and it took you barely and effort at all!
