I really really really love hummus. I love to eat it with veggies, with chips, on sandwiches, hell I'd even eat it with a spoon. But I don't love all the preservatives and whatnot in the store bought hummuses.
So being the resourceful gal I am, I decided to whip up my own recipe and share it with you.
As with all my recipes, it's super easy and good for you! Here is what you'll need:
2 Cans Chickpeas
1 Jar Roasted Red Peppers in olive oil
1/2 tsp Garlic Powder
Olive Oil (if necessary)
Salt and Pepper to taste
First, drain and rinse you chickpeas and plop them in your food processor or high power blender
Next add your jar of roasted red peppers. I used these
Make sure you pour in the oil from the jar as well.
Pop the lid on and turn your food processor/blender on high speed.
Look at all those chickpeas and peppers getting to know each other.
After the chickpeas and peppers have turned into a thick puree, ad your garlic powder and salt and pepper.
Pop the lid back on and turn it on high. At this point, if you need more liquid you can add a bit more olive oil. Let it blend until the mixture is mostly smooth.
Scoop it all into a bowl, throw some fresh cilantro, parsley, or basil on top and serve it up!
My favorite thing to serve hummus with is plantain chips. God they are so good!
